That's an interesting piece, seen it before but never eaten shark, or aged shark at that. In the area we lived it isn't practiced, not with shark anyway but instead aging narwhal skin (maktaaq) is common, less so seal flippers, and very occasionally walrus (just not a common animal in the area). Buried in the ground (usually a pebbly beach/gravel) around late Aug/Sep before it starts to freeze, and then retrieved around mid-December. Very pungent aroma, and if you can get over that it's not too bad! Strong of course and gives you a nice glow. It turns a light fluorescent green, the fat anyway. Was never really into if truth be told but the missus loves it/grew up on it. Not surprisingly her favourite cheese over here is blue cheese and strong goat's cheese. As close as she'll get. Laugh

I was fortunate enough to be taken out one day in mid-July in the home of aged walrus country. Probably the best experience I've ever had in the Arctic, and that included helping to make/sew-up rolls of walrus for aging. Absolutely magical day/night.

West edinburgh had that a couple of weeks ago. Took out my office so had to go in to switch everything back on, was a bit weird driving along the calder road with no streetlights on and all the flats either side in darkness.

Ran down to Mussy Racecourse this afternoon, although only made it as far the Esk before walking the rest.  Kicked a ball about on the 3G at Pinkie for an hour or so then walked back via the High Street.  Anyway, before you all wonder why I haven't posted in the Fitness thread I'll explain, this is about a swan and great big fuck-off white swan at that.  It was sitting, quite comfortably by the looks of it, smack bang in the middle of the pavement in front of Poundstretcher not caring a fig for the nearby traffic or the folk walking round it.  Wish I had had my phone but I don't take it out these days as I don't want the govt tracking me! Otherwise you'd have a photo to go!
